A flavorful anytime of the day casserole and it's gluten and dairy free!
Preheat oven 350 degrees. In an extra large bowl combine plant based sour cream and coconut cream. Stir in the hash browns, cooked ham, plant based cheese and onion. Break up hash browns so there are no large clumps. Spread in a 3-qt. rectangular dish.
Toss together cornflakes and melted buttery spread; sprinkle evenly over potato mixture.
Bake uncovered 55 minutes or until golden brown and bubbly. Remove and let cool for 10-15 before serving. Sprinkle with green onion or scallions if desired.
