Spicy Asian Cucumber Salad

This is a fantastic vegan light cucumber salad that bursts with flavor. Only takes 15 minutes to make and some time to chill. Excellent as a side dish or light lunch.

 2 Cucumbers - seeded and chopped in 1/4" pieces
 1 Red Bell Pepper - seeded and chopped
 ½ cup Onion
 1 tsp Red Pepper Flakes
 3 tbsp Rice Vinegar - Gluten Free
 Salt and Pepper - season to taste

Combine all ingredients in an airtight glass container. Shake gently and chill in refrigerator for 2 hours. Shake occasionally to coat with vinegar and spices.
