Roasted Broccoli

Delicious Air Fryer roasted broccoli recipe is so quick and easy to make!

Roasted Broccoli - Vegan

 4 lbs Broccoli - cleaned and cut into 2-3" pieces
 3 tbsp Minced Garlic
 6 tbsp Grapeseed Oil or Olive Oil
 2 tsp Sea salt or Kosher salt
 1 tsp ground pepper
 1 tsp Onion Powder
 1 tsp Garlic Powder
 1 small shallot - diced
 2 tbsp parmesan cheese- plant based

Preheat Air Fryer at 400°F for 5 minutes. Cut broccoli florets from thick stalks and into 2-3" pieces, wash thoroughly and pat dry. You should have about 8 cups broccoli. In a small mixing bowl combine Grapeseed oil and minced garlic, set to side.

In large mixing bowl toss broccoli with salt, pepper, onion powder, garlic powder. Add the oil and minced garlic mixture and shallot, gently mix until the broccoli is evenly coated.

Cook broccoli in Air Fryer at 400°F for 16-20 minutes. Check and shake broccoli 10 minutes into cooking. Cook until the broccoli is crisp-tender and the tips of some of the florets are browned and roasted. Sprinkle the Parmesan plant-based cheese over the broccoli and cook for 1-2 minutes or until Parmesan is melted.

* This can also be made in the oven. Preheat to 425°F - use convection bake. Cook 20-25 minutes. Shake 10 minutes after cooking. Bake until broccoli is crisp-tender and the tips of some of the florets are browned and roasted. If you don't have the convection feature you can roast in the 425°F oven for 20 minutes then out under the broiler for 1-2 minutes with Parmesan cheese.
